Napoleon mille-feuille — also known as a “thousand-layer pastry” — is a beloved French dessert made from flaky puff pastry, luscious cream, and delicate powdered sugar. While it may look like a patisserie masterpiece, you can make it right in your own kitchen with the help of a whipped cream charger and a pressure regulator.

Ingredients (Serves 6–8)

Instructions
Step 1 — Bake the Puff Pastry Layers

  • Preheat your oven to 400°F (200°C).
  • Place puff pastry sheets on a baking tray lined with parchment paper.
  • Prick the pastry evenly with a fork to prevent over-puffing.
  • Bake for 12–15 minutes, or until golden brown and crisp.
  • Cool completely, then cut each sheet into equal rectangles (about 3x5 inches).

Step 2 — Prepare the Whipped Cream with Cream Charger & Pressure Regulator

  • Pour the chilled heavy cream, powdered sugar, and vanilla extract into your cream whipper.
  • Attach the pressure regulator to your 1.1L cream charger for precise gas control.
  • Charge the whipper, set the pressure to the recommended level for whipped cream (typically around 8–10 bar), and shake gently 6–8 times to combine.
  • Refrigerate for at least 20 minutes for optimal texture and stability.

 
Step 3 — Assemble the Napoleon Mille-Feuille

  • Place one layer of baked puff pastry on a serving plate.
  • Pipe an even layer of whipped cream over the pastry using the cream whipper.
  • Add another layer of pastry and repeat with whipped cream.
  • Top with the final pastry layer.
  • Dust generously with powdered sugar and garnish with berries and mint if desired.
